  • 2 medium onions, finely chopped

  • 2 medium tomatoes, finely chopped

  • 1 tbsp ginger-garlic paste

  • 2 tbsp butter

  • 1 tbsp oil

  • 2 tsp pav bhaji masala

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp cumin seeds

  • Salt to taste

  • 1/2 lemon (for juice)

  • Fresh coriander leaves (for garnish)

For the Pav (Bread Rolls):

  • Pav (dinner rolls)

  • 2 tbsp butter

  • 1/2 tsp pav bhaji masala

Step-by-Step Recipe

Step 1: Prepare the Bhaji

  1. Heat oil and butter in a pan. Add cumin seeds and let them splutter.

  2. Add onions and saute until golden brown.

  3. Add ginger-garlic paste and saute for a minute.

  4. Add tomatoes and cook until soft and mushy.

  5. Add capsicum, turmeric powder, red chili powder, salt, and pav bhaji masala. Mix well.

  6. Add boiled potatoes, beetroot, cauliflower, peas, and carrots. Mash everything together using a potato masher.

  7. Add 1/2 cup water and cook for 10-15 minutes on low heat, stirring occasionally.

  8. Squeeze in lemon juice and mix well.

Step 2: Toast the Pav

  1. Heat butter on a tawa (flat pan).

  2. Sprinkle pav bhaji masala and place the pav on the tawa.

  3. Toast until golden brown on both sides.
